How is summer going? Today I am thinking about FOOD. And family meals and meal planning.
To be honest, I think about food a lot. Because I love food.
And, well, I love feeding my people.
And I have a lot of people to feed!
In the morning I begin to think about what’s for dinner. No kidding. Because food is that important to me! I look at my agenda first thing and see if we will be at home. With four boys it is not uncommon to be out from 3 until 10 with all of their crazy-fun activities. So if we are going to be out I look at the schedule (times & locations) and determine what makes the most sense for dinner – putting something in the crock pot, getting take out, or eating out on the road at or between activities.
If we are going to be home I go straight to menu planning.

I make a grocery list at the same time and purchase groceries as early in the day as possible. During the school year I usually make a quick grocery run after dropping the boys off at school.
During summer, like everything, it varies.
Today we are going to be home. Monday is my designated “Family Day” and I block off the day for laundry, grocery shopping, and food prep. Doing so saves me a lot of time during the week, ensures we have healthy foods on hand, and of course, it’s nice to have clean clothes to wear all week!
Having this designated family day is productivity magic.

I’d pinky swear on this if I was 11.
As a health-conscious woman and mama I cook with the freshest ingredients possible. And the majority of what I cook must be something the majority of my family members will eat.
(Note: I have 3 teenagers).
I always cook more than we need to allow for company and leftovers!
Because my people are ALWAYS hungry (See Note above) and often travel in packs.
So what’s on the menu???

I LOVE to keep it super simple – note the acronym KISS. Keeping it simple saves me time, money and undue stress in the kitchen. PLUS, simple meals are usually healthier meals!

So today I will buy onions pre-chopped, green beans pre-snapped, and watermelon cubed to save time. This way I can prepare the meatloaf and potatoes fresh, and while those are cooking and baking I can set the table, prepare the green beans, and put the fruit in a pretty bowl.
When I lived near Central Market and Whole Foods I’d even buy the meatloaf and mashed potatoes prepared, because they use high-quality, all-natural ingredients and the food is FRESH and prepared daily.

As a business owner and mom of 4 boys our schedule is (practically insanely) full, and it takes a tremendous amount of organization and planning to provide fresh, healthy meals at the table for my family.
Frankly, it only happens 3 or 4 days a week if I am lucky and this is only because I continue to make family meals a priority. Sometimes it is a pain in the a$$ with everything else we have going on.
But eating out can get old. And adding menu planning to my daily agenda has helped me be more organized and consistent about putting dinner on the table. It makes it much easier. Otherwise, I’d be scrambling at 6:00 when everyone is “starving” and tired and we would eat a lot more junk. Or cereal.
I’m pretty sure you know what I mean!
